Thick Vege soup

CORE

4 skinless chicken drumsticks
1 slice of short cut bacon, visible fat removed.
1 medium onion
1 large zucchini
1 leek
1 cup chopped kent pumpkin
1 cup chopped sweet potato
2 medium potatoes chopped
2 sticks of cellery chopped including leaves
1/2 cup green split peas
1 can 4 bean mix
1 can chopped tomato
3 or 4 chopped mushrooms
2 cubes of frozen spinach portions.
stock to cover all vegetables

Brown onion with a spray of oil in your saucepan. Add chicken and brown. Add vegetables and stock and simmer until cooked (at least an hour). Serve in a bowl with a chicken drumstick. It is supposed to be quite a thick soup.

You really can add any veges to this soup, I've made it with green beans and carrot as well.
