CORE
2 large flat mushrooms
1 small frozen spinach portion thawed and remove excess liquid
4-5 tbs Low fat cottage cheese
1 slice of triple smoked ham, or 2 short cut slices of bacon cut finely
1 small onion, cut finely
1 egg
1 tsp dijon mustard. (optional)
salt and pepper to taste
Brush any dirt from the mushroom and remove black "fins" (not really sure what to call them, the inside bit of the mushroom) and combine them with the rest of the ingedients. Mix well.
Put the filling back inside the mushrooms, spray with oil and bake in a moderate oven for 15 - 20 minutes.
