Sweet Corn and Chicken Soup

Serves 4. Points value per serve 3, NOT CORE, Count creamed corn and dry sherry

1 tablespoon peanut oil
1 clove garlic
1 medium onion - finely chopped
150 grams chicken breast mince
2 cups water
1 tablespoon dry sherry (optional)
2 tablespoons soy sauce
2 cups creamed style sweet corn
Heat oil in medium saucepan add garlic and onion and saute for
2 minutes, add chicken and saute further 2 minutes. Add remaining
ingredients except corn and bring to boil. Reduce heat and simmer
for 2 minutes stir in corn and simmer 5 minutes.
Divide into 4 soup bowls.
