Asian Chicken and Mushroom Soup

CORE

serves 2
2oog chicken diced finely
180g oyster mushrooms sliced or pulled appart
200g vermicelli rice noodles
4 cups of chicken stock
3-4 tbsp soy sauce.
corriander to serve (optional)

I like to pre-cook my chicken but it's probably not necessary in this recipe.

Cook (but don't brown) chicken on the saucepan. Add stock and boil for about 3 minutes. Add mushrooms and vermicelli. Boil for a further 3-5 minutes. Add soy sauce and corriander. Serve.

TIP: Eat this soup with a spoon and chopsticks or a spoon and fork :).
