Lemon Chicken

Serves 4

4.5 Points
NOT CORE (Count honey, cornflour and brown sugar)

Cooking spray
4 x 125g chicken breast fillets
1/4 cup lemon juice
1 tsp lemon rind
1 tsp chicken stock powder
1/2 cup loosely packed brown sugar
2 tbsp honey
1/4 tsp soy sauce
2 tsp cornflour
1/4 cup water

Coat large non stick pan with spray, fry chicken until cooked through. Remove and set aside.

Place all other ingredients except water & cornflour in pan, stir well until boiling. Combine cornflour and water, add to pan, stir back to boil.

Cut chicken into large slices, return to pan to reheat, coating with sauce.

Serve with boiled rice and vegies of choice. Pour leftover sauce over chicken & rice.
